Quinoa Mango Salad

Today I'm going to show you a really delicious and healthy recipe for a Quinoa Mango Salad that can be prepared in less than 25 minutes. If you, like me, are looking for something after work If you also do some sports, then this salad is ideal to recharge your batteries. For several weeks now, I could almost live exclusively on quinoa, alongside green juices and smoothies, and I just can't get enough of the stuff =)

Quinoa is a so-called superfood. It is a super plant-based protein source that contains all nine essential amino acids. It is also gluten-free and can therefore be eaten without problems by people with grain intolerances. The so-called Inca grain is on the rise and you should definitely try it. Yummy!

Ingredients: (for 2 people)

1 cup quinoa (approx. 2.6 oz)
2 cups of water
1 ripe mango
100 g Feta cheese
approx. 200g organic smoked salmon
1 shallot
1 avocado

Sauce
1 lemon
1 fresh chili pepper
Olive oil

I always try to buy all my ingredients organic, as these vegetables and fruits simply contain more nutrients. But not everything is naturally available in organic quality all the time. However, one point is important to me: You should definitely buy organic smoked salmon., as conventional salmon is heavily contaminated, including with antibiotics.

Preparation:

Wash quinoa under cold water and cook for approx. 10 minutes
In the meantime, all the ingredients can be finely chopped.
Now put all the ingredients into a large bowl and pour the sauce over them.
