Mmmmhhhh…yummy…today we had a delicious spinach salad with mango and feta, which actually came about from a lot of leftovers. So we still had quite a bit of spinach left over and I just love spinach! Especially in the form of a salad. In winter, that's often a challenge, as winter spinach is usually tough to chew 🙂
We bought our spinach at the farmer's market, so it was naturally very fresh and juicy. We also had a mango and a piece of fresh sheep's cheese, also from the farmer's market.
Here's the recipe:
- 200 g spinach
- 50 g lamb's lettuce
- 1 ripe mango (e.g., Primagusto Coop)
- 150 g sheep cheese
- 1 handful grains and seeds
- Dennis‘ House Dressing
This dressing is made with cold-pressed olive oil, red wine vinegar, 1 lemon, 2 cm pepperoncini, 1 piece of onion, Himalayan salt, and pepper.
