I love ice cream! At least all my friends and people who have (or have to) deal with me know that =) I'm just following an approximately 4,000-year-old tradition from China, as they liked to eat ice cream there back then. For me, ice cream is just part of spring and summer. It would also be part of autumn and winter if the ice cream parlors were open then. But it's a shame that most ice cream flavors are packed with preservatives and artificial flavors. And of course, not to forget: a lot, a lot of sugar. Not only refined industrial sugar (white sugar) is added, but also milk sugar, which is actually intended for calves. Anyway, here I have a delicious recipe for mango banana soft-serve ice cream for you, which is also vegan and contains no artificial additives or flavors.
- 1 Mango (peeled and pitted)
- 250 g frozen banana pieces
- 1/2 lemon (peeled)
- Cashew Butter (from the health food store)
- 1 swab vanilla (from health food store)
I always make my own cashew butter. To do this, I soak about 75 g of cashew nuts in water overnight. Then, add them to the blender first until the nuts are nice and small. Then add the bananas and remaining ingredients and blend well.
You should use a high-performance blender for this, otherwise the cream won't be creamy 😉
Did you know that mangoes are also called „beauty makers from within“? It hasn't worked for me yet, but maybe it's different for you all. Fingers crossed 🙂 In any case, mangoes cleanse the intestines, strengthen gums and connective tissue, and give you clear skin. Blah blah blah... in any case, make sure to use ripe fruits, that way the ice cream will be sweet enough.
